Using coupon

If the coupon is a check lets say for a light bill,  couldn't we take the coupon with the completed remittance letter to a local payment center and have them run it through a check reader?

I doubt it for sure. You need to send it just like the course says

I doubt it. However please read the section on the relevant UCC codes in this course to understand the definitions. It may help understand why it is like a check.
